Baked Vegan Macaroni & Cheese

Creamy, delicious and amazingly cheesy baked vegan macaroni and cheese!

It has been a long time coming for this Baked Vegan Macaroni & Cheese. I have made this approximately 8-10 times, so that I could perfect this recipe. The amount of different brands of vegan cheeses I have tried is bananas. However, it was all worth it to lead up to this very moment. I can not express how proud I am of the taste, texture and appearance.

Classic macaroni and cheese requires that you make a bechamel sauce with a roux. I have never seen the women in my family make a roux for our macaroni and cheese. They typically made a cheese sauce and combined that with more cheese and the pasta. So, my mission was to find a brand of vegan cheese that melted nicely and tasted similar to what I had growing up as a kid.

After trying different cheddar-style brands of cheese. I landed on GO VEGGIE cheese because of how it melts and the taste. Yes, GO VEGGIE Cheese has a vegan selection of cheese, so I recommend you to try that cheese for this recipe. This recipe calls for a block of cheddar-style cheese and for that I used Daiya.

This recipe is truly a vegan version of what my mother used to make for me and my siblings. I may not have a few of the seasonings that she used, but the frame of this recipe is not my own. I simply removed the dairy cheese and added dairy-free brands. I have tried a version of macaroni and cheese with the carrot, onion and etc. It tasted good because of the nutritional yeast , but it didnt quite hit the spot!
