30 Minute Coconut Mango Curry
An easy one-skillet curry that doesn’t skimp on flavor!

  1. In a large skillet or wok, add oil, onion and sauté over medium-high heat until onion begins to soften about 5 minutes; stir intermittently
  2. Add the garlic and cook for about 1 minute, or until fragrant
  3. Add the gren beans, carrots and broccoli florets. Cook for about 3 minutes
  4. Add the spinach and cook for roughly 2 minutes
  5. Add spices and stir to incorporate into vegetables
  6. Pour in coconut milk and stir to combine. Reduce heat to medium and allow the mixture to gently boil for about 5 minutes or until liquid volume has reduced as much as desired
  7. Add the water chestnuts, mango and lime.
  8. Taste your dish and optionally add brown sugar and/or more curry powder to taste
  9. Sprinkle with fresh cilantro and serve over rice or with naan. Enjoy!
