Black Bean Burger

  1. 1. Place your coconut oil in a medium sauce pan on medium-high heat. Allow the oil to heat up and add your carrots, red onions and garlic to the sauce pan. Season with salt and pepper to taste. Sauté the vegetables and garlic, until they are translucent.
  2. 2. Drain the vegetables and garlic and place into a medium sized bowl.
  3. 3. Open and drain the can of black beans, place into a separate bowl and mash with a fork, until to your desired consistency.
  4. 4. Transfer the black beans into the medium sized bowl with the vegetables and garlic, then add the remaining ingredients.
  5. 5. Grab about the size of your palm and roll into a ball, then flatten into a patty.
  6. 6. Place each patty onto a baking sheet aligned with aluminum foil and place into the freezer for 30 minutes to allow to set.
  7. 7. Place the baking sheet into the oven for approximately 15 minutes on 400 degrees.
  8. For added texture, fry the patties to create a crust on the outside. Serve with your desired toppings. Enjoy!
