Preheat oven to 400 degrees. Cook pasta according to directions on the package.
Drain and pour pasta into a ceramic baking dish. Pour milk, coconut milk and butter into a medium sized pot. Bring to a boil. While boiling, pour in first batch of shredded cheese and seasonings, then stir to incorporate the seasonings. Cook for 10 minutes.
Evenly disperse second batch of shredded cheese and cubed cheese into ceramic dish with pasta.
After contents in the medium sauce pot has melted into a cheese sauce, pour into the ceramic dish with the pasta. Evenly disperse the final batch of shredded cheese on top of the pasta.
Bake in the oven for 30-40 minutes. Depending on the type of vegan cheese you used, it may not melt down completely on the top of the pasta.
